Kalima's Kitchen

Jammer of the week: Black Sheep

Throwback to the Black and White Party:

Kalima's Rockin' Rice Dish
Ingredients:
-Any Rice. I use Rice-A-Roni cuz it's cheap and easy to make
-Half a zucchini
-1/4 of a tomato
-1/4 of a slice of sweet potato
-dash of cayenne pepper (optional). you can use any kind of herbs or spices Prep: Chop your zucchini into slices Dice your tomato slice Chop sweet potato. you may want to boil it first so that it's easier to cut. Cooking:
1)Boil rice according to directions on box or bag, or whatever your rice comes in.
2)In a pan, sautee zucchini and tomato. i recommend in olive oil. And add the spice of you choice. Tip: Cut slits in vegetables when sauteeing. This makes it easier for heat to enter so it cooks faster and more evenly.
Serving: Place vegetable on plate as a bed for the rice. Place sweet potato on top.
Prep. Time: 10min.
Cook time: 15min.

Now I know what you're thinking. I bought a whole sweet potato just for one quarter of one slice?! What type of bourgeis shit is that? You're gonna use the rest to make sweet potato fries. i first found out about these when i was working at ALFA (17th & Walnut)and they also have them at REEF Caribbean Lounge (3rd & South). they're so much better than regular french fries. Just chop it up to the size of shoestrings fries. If you have a deep frier you can use that. I put oil in a pan and fry them stovetop. Another way to do it (and a healthier way) is to bake them. If you did boil it, make sure not to boil it for too long or it'll get too mushy.
